Grilled Vegetable Sandwiches

I served these to a family friend who hadn’t eaten a vegetable in over 20 years.  He ate three of them.  I think it was the grill flavor.  He didn’t even miss the meat!

Grilled Vegetable Sandwiches

  • ¼ c Vegenaise
  • 3 cloves garlic, minced
  • 1 T lemon juice
  • Sriracha sauce, if desired
  • 1/8 c olive oil
  • Italian Seasoning Mix
  • 1 c sliced red bell peppers
  • 1 sm zucchini, sliced
  • 1 red onion, sliced
  • 1 sm yellow squash, sliced
  • Giant portabella mushrooms, sliced, if desired
  • Eggpant, sliced, if desired
  • Ciabatta, focaccia, or baguettes

Mix mayo, garlic, and lemon juice.  If your family is half Chinese, or enjoys spices, add a squirt of Sriracha sauce.  Set aside.

Throw veggies in a few bowls and toss in a mixture of olive oil, salt and pepper, and Italian seasonings.  Let sit for a few minutes.

Preheat grill for high heat. Brush grate with oil. Place peppers and zucchini closest to the middle and set onion and squash pieces around them. Cook about 3 minutes. Turn. Cook another three minutes. The peppers may take longer. Remove from grill.

Spread some mayo mix on the cut sides of bread and toast bread if desired. Layer veggies and enjoy as an open faced sandwich.  You could also add a piece of cheese while toasting the bread.

This is one of my family’s favorite recipes.  If you don’t have a grill, don’t worry.  You can achieve almost the same effect by broiling the veggies in the oven.  Just add a bit of paprika, or hickory smoke flavor to the veggies while coating them.

Focaccia bread, split horizontally

Optional: italian seasonings

Mix mayo, garlic, and lemon juice Set aside. Preheat grill for high heat. Brush vegies with olive oil on each side, and sprinkle with a bit of Italian seasoning, if desired. Brush grate with oil.   2. I wanted to add that we recently acquired a panini maker and these sandwiches are great as paninis. They are a lot easier for little ones to eat, as well.
